It feels like I have been making cookies non-stop for the last week-and-a-half. My stand mixer has been getting quite a workout, and I think I have made about 180 cookies. I actually still have frozen cookie dough balls, and cookies, in my freezer. I was baking up until the last minute.
Why was I doing this? I had decided that this year I would bake cookies as gifts. I ended up baking 5 different types of cookies. It probably would have gone a lot faster had I spent a Sunday at work and mixed up all the batches in the industrial mixer and baked them in the industrial ovens. My little stand mixer could only make one batch at a time and I had to make 2-3 batches of each, and my oven could only bake 25-30 cookies at a time whereas at work I would have been able to bake 60+ in one oven (and we have three).
Even though it was a lot of work, it was enjoyable most of the time. And the cookies turned out pretty good. The main modification I made to each of the recipes was cutting back on the sugar. I get a toothache just thinking about how sweet they would be if I had used the printed amounts.
